How To Start New Game Plus?

You will then need to select Load Game and choose the save labeled New Playthrough, which will be the New Game Plus.

New Game Plus Difficulty

A New Game Plus gives you the option to choose between any of the difficulties that are normally available in the game, which includes Professional Mode.
